Stir-fry sugar peas with chicken

Snow peas or sugar peas are the fat, sweet, juicy and crunchy type. This is a popular stir-fry dish that is quick and easy to prepare. Make sure you do not overcook the peas. They should be crisp and crunchy when done.

Ingredients

  • 100 g snow or sugar peas
  • 5 pips garlic, each cut into 3 pcs
  • 150 g chicken breast, cut into slices
  • ginger, 3 to 5 thin slices
  • 1 tbsp oyster sauce
  • 2 tsp soy sauce
  • 2 tsp corn flour
  • salt and sugar
  • cooking oil
  • 1 tsp sesame oil (optional)

Method

  • Marinade chicken with corn flour and 1 tsp soy sauce
  • Heat oil in frying pan, slightly brown the garlic and ginger
  • Add in chicken and stir fry (don’t overcook as it will become tough)
  • Then add in snow peas and stir fry (again, don’t overcook in order to have crunchy texture)
  • Add in soy sauce, oyster sauce, salt and sugar to taste
  • Add a little water, mix well.
  • Add in sesame oil
  • Dish up and serve
Note

You can easily dish up a vegetarian version by substituting the chicken with vegetarian ham. The above photo illustrates the vegetarian version.
