Stir-fry Tofu with Capsicum and Wolfberries

Wolfberries is one of my favorite ingredients. I like to use them in herbal soups, vegetarian dishes, rice congee (porridge) and other dishes. It adds a delicate sweetness and flavor. It is also known to have powerful antioxidants and the Chinese believe that it is good for improving eyesight.

The tofu puffs used here are firmer in texture than the ones which have a hollow center. These are usually cut into half and they soak up the flavor of your dish for a tastier meal.

Ingredients

  • 8 to 10 pcs fried tofu puffs
  • 1 yellow capsicum, sliced.
  • 1 tbsp dried wolfberries (soak in water until soft)
  • 2 pips garlic, chopped
  • cooking oil
  • 1/2 tbsp soy sauce (or to taste)
  • 4 to 5 tbsp of water
  • salt, sugar (amount according to taste)
  • 1 tsp sesame oil (optional)

Method

  • Soak the tofu puffs in hot water briefly to remove excess oil and then cut into half.
  • Heat 1 tbsp cooking oil, add in garlic and fry till fragrant.
  • Add in capsicum slices and wolfberries and stir fry for a short while.
  • Then add in tofu, followed by soy sauce, salt and sugar. Stir fry.
  • Add in water and simmer for a very short while.
  • Add in sesame oil.
  • Dish up and serve hot with rice.

Ingredients

  • 3 large bananas, mashed (berangan is suitable)
  • 9 oz plain flour
  • 5 1/2 oz sugar
  • 6 oz butter
  • 4 tbsp milk
  • 3 eggs beaten
  • 1 level tsp baking powder
  • 1 level tsp bicarbonate of soda
  • pinch of salt

Method

  • Cream butter and sugar until light and fluffy.
  • Add in beaten eggs.
  • Beat well and then add in milk and mashed banana.
  • Mix flour, baking powder, bicarbonate of soda and salt. Fold into batter.
  • Bake at 325 degrees F
Grilled Honey Chicken

Grilled Honey Chicken

Ingredients

  • 2 whole chicken legs
  • 2 sprigs fresh rosemary
  • 2 tbsp djion mustard
  • 1/2 tbsp brown sugar
  • olive oil
  • black pepper
  • salt

Method

  1. Mix all the ingredients and rub on chicken legs and marinade overnight or for at least 2 hours.
  2. Line baking tray with foil. Place chicken legs on the tray and grill. Half way through grilling, baste with marinade. Grill until brown . Just before taking chicken out, baste with marinade again. Cook for another 1-2 mins.
  3. Serve with pasta or rice.
Kiwi Yoghurt Drink

Kiwi Yoghurt Drink

I bought some kiwi fruits which weren’t very ripe. They were a bit sour so I decided to blend them into a fruity drink. Add a dollop of vanilla ice cream and kids will love it.

Ingredients

  • 5 kiwi fruits
  • 1 1/2 cups low fat milk
  • 5 tbsps plain low fat yoghurt
  • 1 tbsp lemon juice
  • 2 tbsp honey (according to taste)
  • vanilla ice cream (optional)

Method

  1. Cut kiwi fruits into half. Using a spoon, scoop flesh from the kiwi fruits.
  2. Put all the ingredients into a blender except the ice cream. Blend until all is well mixed. If mixture is too thick, add more milk.
  3. Serve cold/chilled.

Serve 3 glasses

Grilled Teriyaki Salmon

Grilled Salmon Teriyaki

I like to grill my food because it’s healthier and keeps the kitchen cleaner compared with frying.

Ingredients

  • 250gm salmon
  • salt
  • 6 pics garlic (fried in oil until brown and fragrance)
  • olive oil
  • 1 lemon (optional)

For Marinade

  • 1 tsbp ginger juice
  • 1 1/2 tbsp Kikoman teriyaki sauce (garlic roasted)
  • olive oil

Method

  1. Rub salt on salmon.
  2. Mix teriyaki sauce with ginger juice and olive oil. Marinade salmon with sauce for at least 1/2 an hour.
  3. Line baking tin with baking foil. Pour some oil on the tin and place the salmon on it.
  4. Grill salmon until brown.
  5. When salmon is ready, brush it with basting sauce.
  6. Serve with roasted garlic and lemon juice.

Basting Marinade

  • 1 1/2 tbsp Kikoman teriyaki sauce (garlic roasted)
  • 1 tbsp honey
  • 1 to 2 tbsp olive oil
  • 1 tsp sesame oil

Mix together honey, olive oil, sesame oil and teriyaki sauce. Brush sauce mixture on salmon.

Birthday Cupcakes

Cupcakes are hot now!!! So I made a birthday cake out of cupcakes for my son. He was really delighted when he saw it. A nice change from the usual chocolate cakes (his favourite).

CUPCAKE RECIPE

  • 120g butter
  • 3/4 cup caster sugar (less one tablespoon)
  • 2 eggs
  • 1 1/2 cup self-raising flour
  • 1/2 cup milk
  • paper cups for 12 hole deep patty pans

Mix all ingredients in a bowl. Beat at medium speed until mixture is smooth and colour becomes lighter. Fill paper cups to 3/4 full. Bake in moderate oven (180 C/350 F, Gas Mark 4) for about 20 minutes. When cupcakes are cool, top with buttercream and decorate with coloured sugar rice/chocolate bits. Decorate your own design using butter cream. Make a cone with baking papers and cut a small hole at the tip. Fill the cone with buttercream.

BUTTER CREAM ICING

  • 4 oz / 120 g butter
  • 1 1/4 cup icing sugar
  • Food colour (pink and blue)
  • coloured sugar rice/chocolate bits

Beat butter and sugar together until light and fluffy. For coloured butter cream, add in the colours to the butter cream.

Strawberry Butter cream : Mix in 3 — 4 tbsp strawberry jam

Chocolate Butter Cream : 5 oz semi sweet chocolate. Melt chocolate for 2-3 mins until soft and creamy. When cool, add into the butter cream and mix well
