Stir-fry sugar peas with chicken

Snow peas or sugar peas are the fat, sweet, juicy and crunchy type. This is a popular stir-fry dish that is quick and easy to prepare. Make sure you do not overcook the peas. They should be crisp and crunchy when done.

Ingredients

  • 100 g snow or sugar peas
  • 5 pips garlic, each cut into 3 pcs
  • 150 g chicken breast, cut into slices
  • ginger, 3 to 5 thin slices
  • 1 tbsp oyster sauce
  • 2 tsp soy sauce
  • 2 tsp corn flour
  • salt and sugar
  • cooking oil
  • 1 tsp sesame oil (optional)

Method

  • Marinade chicken with corn flour and 1 tsp soy sauce
  • Heat oil in frying pan, slightly brown the garlic and ginger
  • Add in chicken and stir fry (don’t overcook as it will become tough)
  • Then add in snow peas and stir fry (again, don’t overcook in order to have crunchy texture)
  • Add in soy sauce, oyster sauce, salt and sugar to taste
  • Add a little water, mix well.
  • Add in sesame oil
  • Dish up and serve
Note

You can easily dish up a vegetarian version by substituting the chicken with vegetarian ham. The above photo illustrates the vegetarian version.

Stir-fry Tofu with Capsicum and Wolfberries

Wolfberries is one of my favorite ingredients. I like to use them in herbal soups, vegetarian dishes, rice congee (porridge) and other dishes. It adds a delicate sweetness and flavor. It is also known to have powerful antioxidants and the Chinese believe that it is good for improving eyesight.

The tofu puffs used here are firmer in texture than the ones which have a hollow center. These are usually cut into half and they soak up the flavor of your dish for a tastier meal.

Ingredients

  • 8 to 10 pcs fried tofu puffs
  • 1 yellow capsicum, sliced.
  • 1 tbsp dried wolfberries (soak in water until soft)
  • 2 pips garlic, chopped
  • cooking oil
  • 1/2 tbsp soy sauce (or to taste)
  • 4 to 5 tbsp of water
  • salt, sugar (amount according to taste)
  • 1 tsp sesame oil (optional)

Method

  • Soak the tofu puffs in hot water briefly to remove excess oil and then cut into half.
  • Heat 1 tbsp cooking oil, add in garlic and fry till fragrant.
  • Add in capsicum slices and wolfberries and stir fry for a short while.
  • Then add in tofu, followed by soy sauce, salt and sugar. Stir fry.
  • Add in water and simmer for a very short while.
  • Add in sesame oil.
  • Dish up and serve hot with rice.

Ingredients

  • 3 large bananas, mashed (berangan is suitable)
  • 9 oz plain flour
  • 5 1/2 oz sugar
  • 6 oz butter
  • 4 tbsp milk
  • 3 eggs beaten
  • 1 level tsp baking powder
  • 1 level tsp bicarbonate of soda
  • pinch of salt

Method

  • Cream butter and sugar until light and fluffy.
  • Add in beaten eggs.
  • Beat well and then add in milk and mashed banana.
  • Mix flour, baking powder, bicarbonate of soda and salt. Fold into batter.
  • Bake at 325 degrees F
Grilled Honey Chicken

Grilled Honey Chicken

Ingredients

  • 2 whole chicken legs
  • 2 sprigs fresh rosemary
  • 2 tbsp djion mustard
  • 1/2 tbsp brown sugar
  • olive oil
  • black pepper
  • salt

Method

  1. Mix all the ingredients and rub on chicken legs and marinade overnight or for at least 2 hours.
  2. Line baking tray with foil. Place chicken legs on the tray and grill. Half way through grilling, baste with marinade. Grill until brown . Just before taking chicken out, baste with marinade again. Cook for another 1-2 mins.
  3. Serve with pasta or rice.

Kiwi Yoghurt Drink

I bought some kiwi fruits which weren’t very ripe. They were a bit sour so I decided to blend them into a fruity drink. Add a dollop of vanilla ice cream and kids will love it.

Ingredients

  • 5 kiwi fruits
  • 1 1/2 cups low fat milk
  • 5 tbsps plain low fat yoghurt
  • 1 tbsp lemon juice
  • 2 tbsp honey (according to taste)
  • vanilla ice cream (optional)

Method

  1. Cut kiwi fruits into half. Using a spoon, scoop flesh from the kiwi fruits.
  2. Put all the ingredients into a blender except the ice cream. Blend until all is well mixed. If mixture is too thick, add more milk.
  3. Serve cold/chilled.

Serve 3 glasses
